We put the harvested tarragon leaves and flowers through a steam distillation process, to make a spicy-sweet essential oil with a scent reminiscent of anise. While we grow the tarragon plant primarily for its potent essential oil, it has also become a staple of our communal staff lunches.
Tarragon is a natural deodorizer, that has been proven effective against some strains of bacteria, including the kind that causes bad odors. Its uplifting fragrance has an energizing effect, so it is wonderful to use in the mornings. As anyone who has eaten copious amounts of tarragon knows, it has light numbing effect, caused by a high content of eugenol - this makes it lovely to use on aching muscles.

In Armenia, tarragon is often served in a medley other fresh herbs, to improve the appetite and aid with digestion. It is also a popular soft drink flavor all throughout the Caucasus. Quick word of warning: tarragon contains a high content of estragole, and is not recommended for pregnant or breastfeeding women.
